Adobe Illustrator does not work in the same way as Photoshop. It is a misconception that Illustrator uses layers. (even though there is an option for this it is used only so that bitmap or simple vector shape files can be exported into Photoshop)
The Illustrator file is fully editable but the font alone is flattened. This means that you do not need to purchase the font or if a modified font is used you can still edit the file.
You can add and take away everything from the image. Even change colors should you desire.
