Printers come in different flavours
Process printing uses CMYK color and can print most if not all gradients. Magazines for instance are printed using CMYK process printing. Gradients are not a problem also for digital printers. That is two forms of printing that full color works perfect for.
Then there is printing using Pantone color or one of the other spot color matching systems. This type of printing requires that the number of colors used be kept low due to cost or for maximum versatility. This is a traditional printing method and is used by many design companies. We too design using the Pantone color matching system when required.
As you can see from the above answers we are not limited by technology providing the correct type of printer is used for the job.
If you are concerned about costs or the ability to transfer your design to different mediums then you should state the preferred number of colors to use. This is a question that you can answer on the order form.
